I met Pascal Raffray at La Table due Marais, a restaurant near the Cancale in Bretagne. I arrived near closing time, and unexpectedly, Pascal kindly asked if I would like to have a tour of the restaurant.

La Table du Marais is characteristically labeled Clef Verte. This label from the Foundation for Environmental Education in Europe certifies that the restaurant is engaged in Sustainable Development.

Here are some actions put in place by Pascal:

  • 30-60% of our ingredients come from either organic farms or local producers

  • most of our herbs come from our own garden

  • we try to use as much seasonal fruits and vegetables as possible

  • all of our cooking are done in the restaurant (smoking, preserving...)

  • you will never find any endangered or overfished specie of fish on our menu

  • we use fresh produce (fish, meat, vegetables)

  • we use pellet stoves from La Fresnais to heat your food

  • we replace each light bulb with an energy efficient one and use this for 90% of our lighting

  • with our glass surface, we have chosen material that will better our insulation and reduce energy consumption

  • each month, we observe our water and electricity consumption in order to regulate it

  • our bottles are registered and we have implemented selective sorting of cartons and plastic wrapping with the St. Malo Agglomeration.

  • with our suppliers, we open to reducing packaging and in our kitchen, we use reusable dishcloths

  • most of our maintenance products are L'Ecolabel (a European ecological label)

  • vegetable waste from our kitchen are "added value" through our henhouse at the end of the garden

  • our coffee is Bio and fair trade

  • our toilets are ecological/enviornmentally friendly
